Warabiko () is the traditional starch used to prepare Warabi Mochi (), a beloved Japanese confection known for its translucent, chewy, and delicately sweet texture.
While warabi refers to a type of edible bracken fern (fiddlehead), the starch is derived from its roots and known for producing a soft, slightly elastic gel when heated with water. Authentic hon-warabi-ko () is made from 100% bracken root starch and is extremely rare and expensive due to the labor-intensive extraction process.
This high-quality warabiko contains a small percentage of true warabi starch (hon-warabi-ko), along with lotus root starch and processed starch, offering a more accessible way to recreate the authentic flavour and mouthfeel of traditional warabi mochi. When prepared, the result is a smooth, translucent jelly that pairs beautifully with kinako (roasted soybean flour) and kuromitsu (black sugar syrup).
