SOSA Carboxymethyl Cellulose (CMC)—also known as CMC Gum, Tylose powder, or Tylopur—is a multifunctional thickener and texturizer widely used in the food industry. This fine white powder is a cellulose-derived hydrocolloid with diverse applications in confectionery, bakery, and decorative pastry work.
CMC is especially valued in sugar craft for improving elasticity, drying speed, and structural integrity of fondant, marzipan, and sugar paste. When dissolved in water, it forms a food-safe adhesive used for cake decorations, while also functioning as a protective coating for fruits or a stabilizer in ready-to-bake products.
