In order to give your select poultry dish a thorough and even cooking, oftentimes you must "truss" the loose parts of the bird together. Legs and wings can be brought closer to the body of the chicken, turkey, or game hen by using a trussing needle to thread them together.
Care: Do not put larding needle in the dishwasher, hand wash and dry only. Avoid soaking the larding needle in any liquids.
